1Red bell pepper
9Mushrooms
60gSundried tomatoes

180mlCream
½tspPaprika
½tsp Dill

Instructions
Preheat the oven to 180℃.
Chop up the vegetables, crush the garlic.
Place the vegetables (except the spinach) in a baking tray with some olive oil for 10-15 minutes until soft.
Remove vegetables from the oven and stir.
Clear a space in the middle of the tray and place the salmon fillets in here.
Pour over the cream and mix in the paprika, dill, some salt and pepper.
Place the tray back in the oven for 12-15 minutes until salmon fillets are cooked.
Serving Suggestion
For a higher carbohydrate content, serve with rice, potatoes or pasta.
