Equipment

  • Oven
  • Baking tray

Ingredients

  • 3 Salmon Fillets
  • 1 Onion
  • 3 cloves Garlic
  • 1 Red bell pepper
  • 9 Mushrooms
  • 60 g Sundried tomatoes
  • 9 Cherry tomatoes
  • 1 cup Spinach
  • 180 ml Cream
  • ½ tsp Paprika
  • ½ tsp Dill
  • Salt
  • Pepper

Instructions

  • Preheat the oven to 180℃.
  • Chop up the vegetables, crush the garlic.
  • Place the vegetables (except the spinach) in a baking tray with some olive oil for 10-15 minutes until soft.
  • Remove vegetables from the oven and stir.
  • Clear a space in the middle of the tray and place the salmon fillets in here.
  • Pour over the cream and mix in the paprika, dill, some salt and pepper.
  • Place the tray back in the oven for 12-15 minutes until salmon fillets are cooked.

Serving Suggestion

  • For a higher carbohydrate content, serve with rice, potatoes or pasta.
