Ingredients

  • 2 scoops Whey protein powder (chocolate or vanilla)
  • 1 Sweet potato (medium size, cooked & peeled)
  • 3 Eggs
  • 3 tbsp Almond butter
  • 2 tbsp Honey
  • 30 g Mixed nuts
  • 150 g 85% dark chocolate (melted)
  • 50 g 85% dark chocolate (chopped)

Instructions

  • Mash or puree the cooked sweet potato.
  • Preheat the oven to 170°C.
  • Add the whey, mixed nuts into a medium sized bowl and mix.
  • Whisk the eggs. Add the eggs and honey and mix again.
  • Add the purée sweet potato and mix through well.
  • Melt the dark chocolate then pour it in with the rest of the ingredients and stir it all up.
  • Mix in the extra chocolate chunks.
  • Line a baking tray, pour the mixture into the lined tray and place in a preheated oven for about 12-14 min. The middle should be soft but not too soft.
