6Apple(medium-sized, Pink Lady or Jazz work well, cored and cut into wedges)
1Pear(cored and cut into wedges)
250mlApple juice
1tspVanilla extract
1tspCinnamon (ground)
½Orange(zest from ½ an orange)
For the crumble topping:
100gOats(jumbo porridge)
100gGround almonds
3tbspDesiccated coconut(50g)
1tspCinnamon(ground)
1tspVanilla extract
3tbspHoney
50gMixed nuts
3tbspCoconut oil
50gBlueberries

Instructions
Put the apples and pear in a large pot with the apple juice, vanilla, cinnamon and orange zest.
Cook over a medium heat for about 30 minutes, stirring occasionally, until the apples have softened.
While the fruit is cooking, preheat your oven to 170°C.
To make the crumble, put the oats, ground almonds, desiccated coconut, cinnamon, vanilla, honey and nuts in a food processor and blend for a few seconds only (the mix should retain some texture).
Melt the coconut oil and stir into the crumble. Pile the cooked apple mixture into a baking dish, spread over the fresh blueberries and scatter the crumble evenly over the top of everything.
Bake for 30 minutes or until the crumble is golden.
