For the sauce

Instructions
Preheat your oven to 180°C.
In a medium-sized bowl add the salmon, olive oil and Cajun spice and mix well.
Place the salmon in the oven and cook for about 15 minutes.
On a pan, cook the onions, garlic, mushrooms, green beans & peppers with a little olive oil until soft.
Add the rice in boiling water to cook for 12 min until water evaporates.
Mix the dill, cucumber, lemon juice, garlic and olive oil with the yoghurt.
For the guacamole simply mash the avocado with a little olive oil & lemon juice.
Remove the salmon from the oven, remove the skin and break into pieces with a fork.
In a medium-sized bowl add the rice to create a bed for the rest of the ingredients. Next add the mixed veg, tomatoes & salmon.
Top the dish with the guacamole and yoghurt dressing.
