Ingredients

  • 1 Salmon fillet
  • 1 Onion chopped
  • 70 g Rice
  • 2 clove Garlic (minced)
  • 1 handful Baby spinach
  • 1 tsp Cajun spice
  • 1 tbsp Extra virgin olive oil
  • 4 Cherry tomatoes halved
  • 50 g Green beans
  • 50 g Peas (frozen)

For the sauce

  • 200 g Greek yoghurt
  • 2 tbsp Extra virgin olive oil
  • ½ clove Garlic (minced)
  • ½ handful dill
  • Cucumber (2 thin slices)
  • ½ Lemon (squeeze of a lemon)

For the guacamole

  • 1 Avocado
  • 1 tbsp Extra virgin olive oil
  • ½ Lemon (squeeze of a lemon)

Instructions

  • Preheat your oven to 180°C.
  • In a medium-sized bowl add the salmon, olive oil and Cajun spice and mix well.
  • Place the salmon in the oven and cook for about 15 minutes.
  • On a pan, cook the onions, garlic, mushrooms, green beans & peppers with a little olive oil until soft.
  • Add the rice in boiling water to cook for 12 min until water evaporates.
  • Mix the dill, cucumber, lemon juice, garlic and olive oil with the yoghurt.
  • For the guacamole simply mash the avocado with a little olive oil & lemon juice.
  • Remove the salmon from the oven, remove the skin and break into pieces with a fork.
  • In a medium-sized bowl add the rice to create a bed for the rest of the ingredients. Next add the mixed veg, tomatoes & salmon.
  • Top the dish with the guacamole and yoghurt dressing.
