Ingredients

  • 1 Chicken breast (cooked and sliced)
  • 1 handful Baby spinach (washed)
  • 1 handful Rocket leaves (washed)
  • 1 Apple (cored and sliced)
  • 70 g Beetroot (Roasted pickled and sliced)
  • 100 g Pickled cucumber
  • 1 tbsp Walnuts
  • 1 tbsp Peanuts
  • 40 g Feta cheese

For the dressing:

  • 1 tbsp Extra virgin olive oil
  • 10 ml Apple juice
  • 1 handful Parsley (chopped)
  • 1 handful Mint leaves (chopped)

Instructions

  • Place the chicken, spinach, rocket, apple, beetroot, cucumber and nuts in a medium salad bowl and mix gently.
  • Put the dressing ingredients in a small bowl and mix well.
  • Crumble the feta into the salad, then pour the dressing over. Toss everything together before serving.
