1Sweet potato(chopped)

3Carrot(chopped)
2Red chilli(finely sliced)

Instructions
Mix the chopped potatoes with balsamic vinegar, salt, cumin and paprika and place in a pre-heated oven, 200°C.
Sauté the onions and carrots on medium-high heat for 10 minutes before adding chillies, garlic, tomatoes and peppers.
Add in chopped tomatoes, salt and spices and stir well.
Simmer for 20 minutes.
Add in the juice of a lime, butter beans and kidney beans, and simmer for another 5 minutes.
Add in fresh coriander and honey to taste.
Next, add in your roasted potatoes and mix well.
If you like it spicier, add either cayenne pepper or dried chilli flakes.
