Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 Onion (finely diced)
  • 1 Sweet potato (chopped)
  • 2 Potato (chopped)
  • 3 Carrot (chopped)
  • 2 Red chilli (finely sliced)
  • 2 clove Garlic (crushed)
  • 3 Bell pepper (chopped)
  • 4 tsp Cumin
  • 1 tbsp Paprika
  • 4 Tomatoes (chopped)
  • 400 g Kidney beans
  • 200 g Butter beans
  • 1 handful Coriander (fresh and chopped)
  • 1 Lime (Juice of 1 lime)
  • 1 tbsp Honey
  • 1 tbsp Balsamic vinegar

Instructions

  • Mix the chopped potatoes with balsamic vinegar, salt, cumin and paprika and place in a pre-heated oven, 200°C.
  • Sauté the onions and carrots on medium-high heat for 10 minutes before adding chillies, garlic, tomatoes and peppers.
  • Add in chopped tomatoes, salt and spices and stir well.
  • Simmer for 20 minutes.
  • Add in the juice of a lime, butter beans and kidney beans, and simmer for another 5 minutes.
  • Add in fresh coriander and honey to taste.
  • Next, add in your roasted potatoes and mix well.
  • If you like it spicier, add either cayenne pepper or dried chilli flakes.
