Ingredients

  • 200 g Oats (Uncooked jumbo oats)
  • 1 Banana
  • 2 tsp Cinnamon
  • 1 tbsp Honey
  • 100 g Blueberries
  • 3 tbsp Almonds (flaked)
  • 2 tbsp Pumpkin seeds
  • 200 ml Milk (or almond milk)
  • 1 tbsp Coconut oil
  • ½ tsp Salt
  • 1 tsp Vanilla extract

Instructions

  • Lightly coat a baking dish with a little coconut oil.
  • Place the oats in a bowl and mix with the milk.
  • Place the mixed oats, berries and milk in the baking dish.
  • Add honey, coconut oil, mix and sprinkle cinnamon on top.
  • Chop the banana and spread it out on top.
  • Place in the oven and bake for 20 minutes, then remove from the oven and add the flaked almonds and pumpkin seeds. Place back in the oven and bake for 5 more minutes or until the top of the bake turns brown.
  • Serve warm with your choice of toppings.
