  • Small bowl
  • Air fryer/Oven
  • Chopping board
  • Knife

Ingredients

  • 130g Potatoes
  • 2 Eggs
  • 2 Slices Of Bread
  • 25ml Low Fat Milk
  • Pinch Sea Salt
  • 1 tsp Smoked Paprika
  • 7g Butter
  • 1 Handful Spanich

Instructions

  • Cut the potatoes into little chunks and pop them into a small bowl.
    2. Add 3-4 sprays of fry light and add seasoning of your choice. (smoked paprika used here).
    3. Put them in the in the Oven /  Air-fryer for 15-20 minutes at 200 degrees (depending on how thick the potatoes are cut).
    4. Crack two eggs into the bowl, add the milk and give it a good whisk until the eggs and milk are combined.
    5. Add the eggs to the non stick pan along with a handful of spanich and scramble the eggs until cooked to your preferred consistency.
    6. Toast the bread.
    7. Serve up with the scrambled up & spanich on the toast with the potato chunks on the side.
    8. Enjoy!
