Ingredients
4Sweet Potatoes
1lbLean Mince
1Pepper
10Cherry Tomatoes
80gGrated Cheese
2tbspOlive Oil
4tbspPassata
4tbspSweet Chilli Sauce
2tbspBalsamic Vinegar
2tsp Paprika
1tspSalt
1tspPepper
1tsp Garlic Granules
1tspChilli Flakes

Instructions
Cut the sweet potatoes in half (lengthways).
Lay them out on the roasting tray and drizzle over the olive oil.
Roast in the oven at 200 degrees for 25 minutes, or until soft when poked with a fork.
While the sweet potatoes are roasting, chop the pepper and cherry tomatoes.
In the pan, cook the mince, peppers and tomatoes over a medium heat for 8-10 minutes or until cooked through.
Add the passata, sweet chilli sauce, vinegar and seasonings while the mince & veg are cooking.
Take the sweet potatoes out of the oven once they are baked.
Load the 2 halves of the potatoes with the mince from the pan.
Sprinkle the grated cheese over the top and let it melt for a minute, then enjoy!
