Equipment

  • 1 Pan/Wok
  • 1 Roasting tray

Ingredients

  • 4 Sweet Potatoes
  • 1 lb Lean Mince
  • 1 Pepper
  • 10 Cherry Tomatoes
  • 80 g Grated Cheese
  • 2 tbsp Olive Oil
  • 4 tbsp Passata
  • 4 tbsp Sweet Chilli Sauce
  • 2 tbsp Balsamic Vinegar
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Granules
  • 1 tsp Chilli Flakes

Instructions

  • Cut the sweet potatoes in half (lengthways).
  • Lay them out on the roasting tray and drizzle over the olive oil.
  • Roast in the oven at 200 degrees for 25 minutes, or until soft when poked with a fork.
  • While the sweet potatoes are roasting, chop the pepper and cherry tomatoes.
  • In the pan, cook the mince, peppers and tomatoes over a medium heat for 8-10 minutes or until cooked through.
  • Add the passata, sweet chilli sauce, vinegar and seasonings while the mince & veg are cooking.
  • Take the sweet potatoes out of the oven once they are baked.
  • Load the 2 halves of the potatoes with the mince from the pan.
  • Sprinkle the grated cheese over the top and let it melt for a minute, then enjoy!
