½tbspRapeseed oil
3Cherry tomatoes
½tspSmoked paprika
½tspChilli powder
2Eggs
20gGrated mozzarella Cheese
50gSmoked salmon
1sliceSourdough(60g)
½tbspButter
Salad
1cupSalad
1tbspBalsamic vinegar
½tbspRapeseed oil

Instructions
Heat ½ tbsp oil on a pan.
Add the cherry tomatoes, paprika and chilli.
Cook for 3-4 minutes on a medium heat.
Add the eggs to the pan and scramble lightly.
Once the eggs are lightly scrambled, add the cheese and sliced smoked salmon. Mix gently until the cheese has melted through.
Toast the bread.
Place the salad in a bowl, drizzle over the balsamic and rapeseed oil.
Butter the toast, serve alongside the salad, topped with the smokey eggs.
