For the Salsa
1Onion(small)
1cloveGarlic
½Jalapeno
½tinPlum tomatoes
1tbspHoney
1tbspLime juice
1pinchSalt
½tspCumin powder
1tspSmoked paprika
1tbspFresh coriander

Instructions
Blitz the tomatoes onion, jalapeno, garlic, honey, lime juice, salt, herbs and spices in a food processor for 1-2 minutes.
Stop and scrape down the sides if needed. Repeat 2-3 times to make sure everything is blitzed.
Preheat the oven to 180℃.
Heat the oil in a non-stick pan over a medium heat.
Add the onion, garlic, herbs and spices and cook for 2-3 minutes until soft.
Next add the mince, water, tomato puree and BBQ sauce and mix the spices through it.
Leave to cook on a medium heat for 5 minutes until brown.
Heat the tortillas in the oven for 5-7 minutes.
Spoon the mince into the tortillas and top with the grated cheddar.
Pop the taco boats back in the oven to melt the cheese at this point if you wish.
Next add the salsa, cherry tomatoes, sweet corn, lettuce, avocado and fresh chopped coriander to serve.
