Ingredients
1tbspOlive oil
1Red bell pepper(sliced)
1Onion(sliced)
1Chicken breast(approx. 200g, sliced)
1tbspLemon juice
2Tortilla wrap
2tbspGreek yoghurt
60gCheddar cheese
1cupWild leaf salad
½tspOregano
½tspCumin(powder)
½tspGarlic Powder
1tspSmoked paprika
½tspCayenne pepper

Instructions
Heat half the olive oil on a non-stick pan.
Add the onions and peppers to the pan along with half of the amount of oregano, cumin, garlic powder, smoked paprika and cayenne pepper.
Fry on a medium heat for 10 minutes, stirring often.
Meanwhile, marinate the sliced chicken breast in a small bowl by covering in the remaining herbs and spices and drizzling over the lemon juice. Massage the seasoning into the chicken with your fingers.
Remove the onions and peppers from the pan.
Drizzle the rest of the olive oil onto the pan and fry the chicken strips on a medium heat. Cook for 4-5 minutes on each side or until cooked through.
Assemble the fajitas with the salad leaves, greek yoghurt and grated cheddar cheese.
