Equipment

  • Large mixing bowl
  • Non-stick pan

Ingredients

  • 1 tbsp Olive oil
  • 10 Mushrooms (chopped)
  • 1 Red bell pepper (chopped)
  • 1 Red onion (chopped)
  • 10 Cherry tomatoes (quartered)
  • 40 g Chorizo (chopped)
  • 100 ml Milk
  • 6 Eggs
  • ½ tsp Paprika
  • ½ tsp Cumin
  • ½ tsp Garlic
  • ½ tsp Black pepper

Instructions

  • Heat ½ tbsp of olive oil on a non-stick pan.
  • Add the mushrooms, bell pepper and onion. Cook on a medium heat for 5 minutes. Mixing often.
  • Add the chorizo and cook for a further 5 minutes until the vegetables are soft and slightly browned. Remove from the pan and set aside.
  • In a large bowl, beat the eggs, milk, paprika, cumin, garlic and black pepper.
  • Add some oil to the pan and place it back over a medium heat.
  • Pour quarter of the mixture onto the pan and cook for one minute until set. Flip and do the same on the other side.
  • Transfer the egg wrap onto a plate and spoon a quarter of the filling into the wrap, and roll up.
  • Do the same with the rest of the egg mix and fillings.
  • Sprinkle over some cheese and serve.
