Ingredients
1tbspOlive oil
10Mushrooms(chopped)
1Red bell pepper(chopped)
1Red onion(chopped)
10Cherry tomatoes(quartered)
40gChorizo(chopped)
100mlMilk
6Eggs
½tspPaprika
½tsp Cumin
½tspGarlic
½tspBlack pepper

Instructions
Heat ½ tbsp of olive oil on a non-stick pan.
Add the mushrooms, bell pepper and onion. Cook on a medium heat for 5 minutes. Mixing often.
Add the chorizo and cook for a further 5 minutes until the vegetables are soft and slightly browned. Remove from the pan and set aside.
In a large bowl, beat the eggs, milk, paprika, cumin, garlic and black pepper.
Add some oil to the pan and place it back over a medium heat.
Pour quarter of the mixture onto the pan and cook for one minute until set. Flip and do the same on the other side.
Transfer the egg wrap onto a plate and spoon a quarter of the filling into the wrap, and roll up.
Do the same with the rest of the egg mix and fillings.
