500gGround beef
1Free-range egg
1Onion(peeled and finely chopped)

8Cherry tomatoes(halved)
50gCheddar cheese(cut into cubes)

Instructions
Preheat the oven to 180°C.
In a large bowl, mix together the beef, egg, onion, garlic, barbecue sauce, tomato purée, salt and pepper. With clean hands, form the mixture into small patties – roughly 8 bite- sized burgers.
Heat the oil in a large non-stick pan over medium-high heat, add the patties and brown for 2 minutes on each side. Don’t crowd the pan. Cook them in batches if necessary.
Transfer to a baking tray, then finish cooking them in the oven for 10 minutes.
Once the burgers are ready, start assembling. Get your mini skewers – metal or wood – and thread the tomato first, then the lettuce, cheese and lastly the mini burger.
Tip: Add a tbsp of flour of the patties do not hold their shape
