Ingredients

  • 500 g Ground beef
  • 1 Free-range egg
  • 1 Onion (peeled and finely chopped)
  • 3 clove Garlic (peeled and crushed)
  • 1 tbsp Barbecue sauce
  • 1 tbsp Tomato puree
  • 1 tsp Salt
  • 1 tsp Ground pepper
  • ½ tbsp Extra virgin olive oil
  • 8 Cherry tomatoes (halved)
  • 50 g Cheddar cheese (cut into cubes)
  • 6 handful Lettuce leaves (washed and cut into chunks)

Instructions

  • Preheat the oven to 180°C.
  • In a large bowl, mix together the beef, egg, onion, garlic, barbecue sauce, tomato purée, salt and pepper. With clean hands, form the mixture into small patties – roughly 8 bite- sized burgers.
  • Heat the oil in a large non-stick pan over medium-high heat, add the patties and brown for 2 minutes on each side. Don’t crowd the pan. Cook them in batches if necessary.
  • Transfer to a baking tray, then finish cooking them in the oven for 10 minutes.
  • Once the burgers are ready, start assembling. Get your mini skewers – metal or wood – and thread the tomato first, then the lettuce, cheese and lastly the mini burger.

Tip: Add a tbsp of flour of the patties do not hold their shape
