The dates need to be soaked for an hour before starting this recipe, so you could do this in advance.

Ingredients

  • 12 Medjool dates (pitted raw)
  • 10 tbsp Cashew nuts (150g)
  • 3 tbsp Desiccated coconut (50g plus more for rolling the balls)
  • 1 Lemon (freshly grated rind of 1 Lemon)
  • 1⁄2 Lemon (juice of 1⁄2 a lemon)

Instructions

  • Soak the dates in warm water for 1 hour.
  • Blend the dates to a pulp with a small amount of water. Add the nuts to the blender and blitz into small pieces.
  • Scrape the date mixture into a large bowl and stir in the coconut, lemon rind and lemon juice until well mixed.
  • Using clean hands, roll the mix into golf ball-sized portions. Roll each ball over a plate covered in desiccated coconut to coat.
  • Refrigerate for 1 hour and serve.
