Instructions
Preheat the oven to 200°C.
Line a muffin tin with 8 muffin cases.
Put all the nuts in a large bowl and mix to combine.
In a separate bowl, mix the honey with the agave syrup and vanilla extract.
Pour your wet ingredient mixture over the top of your dry ingredients and mix them together until all the nuts are evenly coated.
Carefully spoon the mixture into the cases, using two spoons if that makes it easier.
Place your nut clusters in the oven and cook for 10 to 12 minutes, or until the tops are lightly golden.
Remove from the oven and allow to cool for 5 minutes before carefully transferring to a wire rack to cool.
Last, melt the dark chocolate in a Pyrex bowl set over a saucepan of barely simmering water and spoon over the nut clusters, allowing them to set before serving.
