Ingredients

  • 4 tbsp Cashew nuts (halved)
  • 4 tbsp Almonds
  • 4 tbsp Hazelnuts
  • 4 tbsp Walnuts crushed slightly in your hands
  • 3 tbsp Honey
  • 1 tbsp Agave syrup
  • 1 tsp Vanilla extract
  • 75 g Dark chocolate (70% cocoa solids, broken into chunks)

Instructions

  • Preheat the oven to 200°C.
  • Line a muffin tin with 8 muffin cases.
  • Put all the nuts in a large bowl and mix to combine.
  • In a separate bowl, mix the honey with the agave syrup and vanilla extract.
  • Pour your wet ingredient mixture over the top of your dry ingredients and mix them together until all the nuts are evenly coated.
  • Carefully spoon the mixture into the cases, using two spoons if that makes it easier.
  • Place your nut clusters in the oven and cook for 10 to 12 minutes, or until the tops are lightly golden.
  • Remove from the oven and allow to cool for 5 minutes before carefully transferring to a wire rack to cool.
  • Last, melt the dark chocolate in a Pyrex bowl set over a saucepan of barely simmering water and spoon over the nut clusters, allowing them to set before serving.
