This dish is just delicious and surprisingly easy and quick to make. I can’t take credit for it, though, as this is my mammy’s recipe. She is a genius at coming up with simple but clever dishes.

Equipment

  • Large saucepan

Ingredients

  • 1 Head of cauliflower (chopped into florets)
  • 1 tbsp Extra virgin olive oil
  • 50 g Bacon (chopped into pieces)
  • 300 ml Milk
  • 2 Free-range egg (egg yolks only)
  • 2 tbsp Greek yoghurt
  • 100 g Cheddar cheese
  • 1 tsp Salt
  • 1 tsp Ground pepper

Instructions

  • Boil or steam the cauliflower for 5 minutes.
  • Heat the oil and fry the bacon in a large saucepan for 2 to 3 minutes until crisping up.
  • In a small dish, whisk the milk with the egg yolks, salt and pepper and pour into the saucepan with the bacon.
  • Add the cauliflower and Greek yoghurt and mix well until the cauliflower is completely coated.
  • Pour the mix into an oven-proof glass dish, spread out evenly and grate the Cheddar cheese over the top.
  • Place the dish under the grill for 5 to 7 minutes until the top turns brown and the cheese is bubbling.
