This dish is just delicious and surprisingly easy and quick to make. I can’t take credit for it, though, as this is my mammy’s recipe. She is a genius at coming up with simple but clever dishes.

1 Head of cauliflower (chopped into florets) 1 tbsp Extra virgin olive oil 50 g Bacon (chopped into pieces) 300 ml Milk 2 Free-range egg (egg yolks only) 2 tbsp Greek yoghurt 100 g Cheddar cheese 1 tsp Salt 1 tsp Ground pepper
Boil or steam the cauliflower for 5 minutes.
Heat the oil and fry the bacon in a large saucepan for 2 to 3 minutes until crisping up.
In a small dish, whisk the milk with the egg yolks, salt and pepper and pour into the saucepan with the bacon.
Add the cauliflower and Greek yoghurt and mix well until the cauliflower is completely coated.
Pour the mix into an oven-proof glass dish, spread out evenly and grate the Cheddar cheese over the top.
Place the dish under the grill for 5 to 7 minutes until the top turns brown and the cheese is bubbling.
