Instructions
Toast your bread on a grill or in a toaster.
Scoop out the flesh from the avocado, mash with a fork then spoon it on to the slices of toasted bread and spread out evenly.
Spread the cottage cheese across the top of the avocado.
Lay the sliced tomatoes on top of the cottage cheese, season with salt and pepper and serve.
