Equipment

  • Bun tin
  • Paper cases
  • Small saucepan

Ingredients

  • 200 g Mixed nuts (chopped)
  • 30 g Mixed seeds
  • 3 tbsp Cranberries (or raisins)
  • 1 tsp Salt
  • 100 g Dark chocolate (75% cocoa solids)
  • 2 tbsp Honey
  • 3 tbsp Peanut butter
  • 1 tbsp Coconut oil

Instructions

  • Line a 12-cup bun tin with paper cases.
  • Put the chopped nuts, mixed seeds, dried cranberries or raisins and salt in a bowl.
  • In a small saucepan melt the dark chocolate with the honey, peanut butter and coconut oil over a low heat until melted. Pour the chocolate, honey and nut butter mix over the mixed nuts, seeds and fruit and mix well.
  • Using 2 spoons, scrape into baking cases, roughly 1 tbsp each.
  • Put in the fridge for at least an hour and allow to set. Remove from the fridge, serve and gobble. Store airtight for up to a week.
