Coconut and dark chocolate are a match made in heaven. These two go hand in hand and complement each other perfectly. The sweet taste of coconut is held together by a dark chocolate coating.
This is a great rest day snack. It is low in carbohydrates with a moderate amount of fat and fibre, which will help you sty full for longer.

20tbspDesiccated coconut(150g)
100gDark chocolate(I use Lindt 90%)
3tbspCoconut cream
2tbspCoconut oil
2tbspGreek yoghurt
1tbspHoney

Instructions
Melt the coconut oil in a saucepan on low heat.
Then mix in a bowl with the desiccated coconut, honey, coconut cream and yoghurt.
Roll the mixture into small balls and place on greaseproof paper.
Melt the chocolate in a bowl over hot water, then simply roll the balls in the chocolate and leave to cool in the fridge.
