Instructions
Preparation
Preheat your oven to 180°C.
Chop the peppers, and mushrooms and toss them in a bowl with salt, cumin, smoked paprika, garlic powder, salt and olive oil.
Pour the spiced vegetables into a baking dish and place in the oven to cook for 15-20 minutes.
For the burger
Mix the beef with salt, olive oil, tomato puree, egg, chopped onion and Worchester sauce until all the ingredients are combined.
Form the mixture into 1 large burger or three smaller burgers.
Pre-heat a non-stick pan and add the burger, cook for 2 minutes each side.
Transfer the burger to a baking dish and place in a pre-heated oven at 180°C for 15 minutes, until the burger is cooked through.
Remove from the oven and add grated cheese, place back in the oven for a minute to allow the cheese to melt.
In a large serving bowl pour in the spinach leaves and squeeze some lemon juice on top.
Next, take out your burger and place it in the centre of the bowl on the spinach leaves
Remove the peppers and mushrooms from the oven and place them around the edges of the burger. Add the tomatoes and avocado on top of the burger and serve.
