Expert Tips

This recipe is best served alongside salsa, our guacamole or some sour cream dip! To further increase the carb content, add some cooked rice to the mince when cooking. Reduce the fibre by including less kidney beans.

Equipment

  • 1 Pan/Wok
  • 1 Knife

Ingredients

  • 250 g Lean Mince
  • 2 Whole Wheat Tortilla Wraps
  • 1 tin Kidney Beans (drained)
  • 1 Pepper
  • 150 g Cherry Tomatoes
  • 50 g Spinach
  • 60 g Cheddar Cheese (grated)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic Granules
  • 2 tsp Paprika

For the sauce:

  • 150 g Passata
  • 2 tbsp Sweet Chilli Sauce
  • 1 tbsp Balsamic Vinegar
  • 1 tsp Honey

Instructions

  • Chop the pepper and cherry tomatoes.
  • Add them to a large pan/wok and fry for 1 minute on a medium-high heat.
  • Next, add in the minced meat and allow it to cook, stirring regularly, for approx. 10 minutes.
  • While it is cooking, add the seasonings (salt, pepper, garlic, paprika) and the sauce ingredients as listed above.
  • For the last 2 minutes of cooking, add in the spinach and stir until it has wilted.
  • Once the meat is cooked, sprinkle the grated cheese over the top and mix.
  • Divide the mix between the 2 wraps, roll into a burrito & enjoy!
