Ingredients

  • 2 slices Sourdough Bread
  • ½ Avocado (peeled and mashed)
  • 1 tsp Fresh Lime Juice
  • 1 pinch Salt
  • ¼ tsp Garlic Powder
  • ¼ tsp Black Pepper
  • 2 Eggs
  • 2 tsp Basil Pesto
1 Serving

Instructions

  • Peel and mash up the avocado on a plate.
  • Add lime juice, salt and garlic powder to the avocado and mix everything together.
  • Toast the slices of bread.
  • To make the pesto fried eggs, first heat the pesto on a non-stick frying pan for approximately 30 seconds, as the pesto can burn easily.
  • When hot, crack the eggs into the pan and fry for approx. 3 minutes or until they are cooked to your liking.
  • To assemble, spread the avocado mash evenly onto the toast. Add one egg on each slice of bread and finish with some pepper on top.
