If you're not the biggest fan of fish, why not try chicken or minced beef inside the tacos instead!

Equipment

  • Air fryer/Oven
  • Non-stick pan
  • Large Chopping Board

Ingredients

  • 4 Salmon Darnes (skinless and chopped into cubes)
  • 1 tsp Honey
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 Avocado (peeled and sliced)
  • 100 g Lettuce (washed and chopped finely)
  • 8 Mini Tortilla Wraps
  • 2 tbsp 0% Fat Greek Yoghurt
  • 2 tbsp Siracha Sauce

For The Salsa:

  • 100 g Pineapple (diced into small cubes)
  • 7 Cherry Tomatoes (diced into small cubes)
  • 100 g Sweetcorn
  • 1 tbsp Lime Juice
  • ¼ tsp Rock Salt
  • ¼ tsp Black Pepper

Instructions

  • To prepare the salsa, first wash your pineapple, cherry tomatoes and drain the sweetcorn.
  • Chop the pineapple and cherry tomatoes into small cubes. Add both into a bowl with the sweetcorn, salt, pepper and lime juice.
  • Mix everything together and leave to the side.
  • Wash the lettuce, dry and chop it up finely. Peel your avocado and slice into thin strips.
  • Once all fillings are prepared, move onto seasoning the salmon. Place cubed salmon pieces, honey, paprika and garlic powder into a bowl.
  • Make sure all salmon pieces are covered in seasoning and transfer them to an air fryer/ oven tray lined with tinfoil.
  • Cook the salmon for 5 mins. Take the tray out and turn the pieces and cook for a further 2 mins or until fully cooked through.
  • When the salmon is cooked, you can heat your tortilla wraps on a clean, non-stick pan for 1 minute either side.
  • To assemble the taco, first add lettuce onto the wrap, then salsa, avocado and salmon.
  • For the spicy sauce, simply mix the greek yoghurt and siracha together in a bowl.
  • Add a drizzle of the sauce on top of the tacos and enjoy!
