Ingredients
4Salmon Darnes(skinless and chopped into cubes)
1tspHoney
1tspPaprika
1tspGarlic Powder
1Avocado(peeled and sliced)
100gLettuce(washed and chopped finely)
8Mini Tortilla Wraps
2tbsp0% Fat Greek Yoghurt
2tbspSiracha Sauce
For The Salsa:
100gPineapple (diced into small cubes)
7Cherry Tomatoes(diced into small cubes)
100gSweetcorn
1tbspLime Juice
¼tspRock Salt
¼tspBlack Pepper

Instructions
To prepare the salsa, first wash your pineapple, cherry tomatoes and drain the sweetcorn.
Chop the pineapple and cherry tomatoes into small cubes. Add both into a bowl with the sweetcorn, salt, pepper and lime juice.
Mix everything together and leave to the side.
Wash the lettuce, dry and chop it up finely. Peel your avocado and slice into thin strips.
Once all fillings are prepared, move onto seasoning the salmon. Place cubed salmon pieces, honey, paprika and garlic powder into a bowl.
Make sure all salmon pieces are covered in seasoning and transfer them to an air fryer/ oven tray lined with tinfoil.
Cookthe salmon for 5 mins. Take the tray out and turn the pieces and cook for a further 2 mins or until fully cooked through.
When the salmon is cooked, you can heat your tortilla wraps on a clean, non-stick pan for 1 minute either side.
To assemblethe taco, first add lettuce onto thewrap, then salsa, avocado and salmon.
For the spicy sauce, simply mix the greek yoghurt and siracha together in a bowl.
Add a drizzle of the sauce on top of the tacos and enjoy!
