  • 3 Free-range egg
  • 1 handful Baby spinach
  • 1 tsp Butter
  • 2 tbsp Cream
  • ½ Salt
  • ½ Ground pepper

Instructions

  • In a small bowl, whisk eggs, cream, salt and pepper.
  • In a small non-stick pan, melt butter over medium-high heat, add in spinach and stir every 30 seconds for 2 minutes.
  • Add eggs and cook by stirring slowly just until eggs are thickened and no liquid egg remains.
