Equipment

  • 1 Ovenproof dish
  • 1 Large Pan / Wok
  • 1 Knife

Ingredients

  • 2 lb Lean Mince
  • 1 tin Kidney Beans (drained)
  • 1 Pepper
  • 300 g Cherry Tomatoes
  • 150 g Spinach
  • 150 g Mozzarella / Cheddar Blend (grated)
  • 400 g Tortilla Chips
  • 1 tsp Black Pepper
  • 1 tsp Salt
  • 1 tsp Garlic Granules
  • 2 tsp Paprika

For the sauce

  • 300 g Passata
  • 3 tbsp Sweet Chilli Sauce
  • 3 tbsp Balsamic Vinegar
  • 1 tbsp Honey

Instructions

  • Preheat the oven to 200 degrees celsius.
  • Chop the pepper finely and cut the cherry tomatoes into halves.
  • Add them to a large pan/wok and fry for 1 minute on a medium-high heat.
  • Next, add in the minced meat and allow it to cook, stirring regularly, for approx. 12-15 minutes.
  • While it is cooking, add the seasonings (salt, pepper, garlic, paprika) and the sauce ingredients as listed above.
  • For the last 2 minutes of cooking, add in the spinach and stir until it has wilted.
  • Once the meat is cooked, put it into an ovenproof dish and spread the grated cheese evenly over the top.
  • Place the dish into the oven for approx 5-7 minutes, or until the cheese has fully melted.
  • Remove from the oven and serve alongside the tortilla chips.
