Ingredients
4Potatoes(Large)
125gBacon Lardons
1Onion(Small)
1tbsp Olive Oil
1tspSalt
1tspPepper
2tspMixed Herbs

Instructions
Chop the onion finely.
Slice the potatoes into circular pieces.
Heat the oil on the pan, then add the bacon lardons and onions to fry for 2 minutes.
Add the potato slices, spreading them evenly over the base of the pan.
Season with salt, pepper and the mixed herbs.
Fry the potatoes over a medium heat, occasionally (and carefully!!) turning, for approx. 10 minutes or until golden brown.
