Equipment

  • Blender or food processor
  • Oven
  • Baking tin

Ingredients

  • 75 g Oats (oats blitzed in a blender or food processor)
  • 6 scoop Whey protein powder (vanilla)
  • 70 g Mixed nuts (cashew, almonds and hazelnuts)
  • 100 ml Milk (or almond milk, 70-100ml)
  • 2 tbsp Chia seeds
  • 5 tbsp Dark chocolate chips
  • 100 g Medjool dates
  • 2 tbsp Coconut oil
  • 1 tbsp Honey

Instructions

  • Toast the nuts and seeds till light brown, 7-8 minutes at 175°C.
  • In a blender or food processor blitz the dates with the honey and coconut oil.
  • Mix all the dry ingredients together then add in the dates and coconut oil mixture and mix together.
  • While mixing, add a little almond or whole milk, 1 tablespoon at a time to form a dough. Add in the liquid in stages slowly to avoid the mix getting too sticky.
  • Then, using your hands create a large thick round dough by combining the mixture together.
  • Spread the dough in a shallow baking tin lined with baking paper, and pack down tightly.
  • Refrigerate for at least 3 hours before cutting into the desired number of bars e.g. 10 bars.
