Ingredients

  • 2 Sweet potato
  • 1 tbsp Coconut oil
  • 1 Onion (thinly sliced)
  • ¼ tsp Salt
  • ¼ tsp Ground pepper
  • 4 clove Garlic (chopped)
  • 1 Red bell pepper (thinly sliced)
  • 2 handful Baby spinach
  • 100 g Cheddar cheese (grated)
  • 3 Free-range egg
  • ¼ tsp Cayenne pepper
  • ¼ tsp Smoked paprika

Instructions

  • Preheat the oven to 180°C.
  • Chop the sweet potato into really small cubes.
  • Meanwhile, heat the coconut oil over medium-low heat in a large non-stick pan. Add the onion, garlic, salt, then the sweet potato and cook until the sweet potatoes have softened, stirring often.
  • Sprinkle the ingredients with the cayenne pepper and smoked paprika. Add the red pepper and cook over medium heat for about 2 minutes until tender. Add the spinach and cook until the spinach is wilted.
  • Crack 3 eggs over the hash, scatter the cheese on top and then place the skillet or pan in the preheated oven at 180°C and bake for roughly 5-6 minutes.
