Ingredients
2Sweet potato
1tbspCoconut oil
1Onion(thinly sliced)
¼tspSalt
¼tspGround pepper
4cloveGarlic(chopped)
1Red bell pepper(thinly sliced)
2handfulBaby spinach
100gCheddar cheese(grated)
3Free-range egg
¼tspCayenne pepper
¼tspSmoked paprika

Instructions
Preheat the oven to 180°C.
Chop the sweet potato into really small cubes.
Meanwhile, heat the coconut oil over medium-low heat in a large non-stick pan. Add the onion, garlic, salt, then the sweet potato and cook until the sweet potatoes have softened, stirring often.
Sprinkle the ingredients with the cayenne pepper and smoked paprika. Add the red pepper and cook over medium heat for about 2 minutes until tender. Add the spinach and cook until the spinach is wilted.
Crack 3 eggs over the hash, scatter the cheese on top and then place the skillet or pan in the preheated oven at 180°C and bake for roughly 5-6 minutes.
